Ole Omelet

Ingredients

  • 2 eggs
  • 3 tablespoons water
  • 1/2 teaspoon chives minced
  • 1/4 teaspoon hot sauce
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon dill weed
  • 1 tablespoon butter
  • 1/4 cup salsa
  • 1/4 cup cheddar cheese shredded
  • Sour cream optional

Instructions

  • In a bowl, beat together eggs, water, chives, hot sauce, salt, pepper and dill.
  • In an 8-inch skillet, melt butter over medium-low heat. Add egg mixture. As eggs set, lift edges, letting uncooked portion flow underneath.
  • Top with cheese and salsa. Fold the omelet in half. Cover and cook for 1-2 minutes longer.
  • Serve with sour cream and more salsa, if desired.
