Ole Omelet

Ingredients
- 2 eggs
- 3 tablespoons water
- 1/2 teaspoon chives minced
- 1/4 teaspoon hot sauce
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon dill weed
- 1 tablespoon butter
- 1/4 cup salsa
- 1/4 cup cheddar cheese shredded
- Sour cream optional
Instructions
- In a bowl, beat together eggs, water, chives, hot sauce, salt, pepper and dill.
- In an 8-inch skillet, melt butter over medium-low heat. Add egg mixture. As eggs set, lift edges, letting uncooked portion flow underneath.
- Top with cheese and salsa. Fold the omelet in half. Cover and cook for 1-2 minutes longer.
- Serve with sour cream and more salsa, if desired.
