Instructions
  1. Cook pasta according to package directions; drain.
  2. Rinse with cool water; drain again.
  3. Cover to keep warm.
  4. Heat vegetable oil in a large skillet over medium-high heat until hot.
  5. Add onion and garlic and mix well.
  6. Sauté until onion is tender.
  7. Add undrained tomatoes, picante sauce, black beans, chili powder, cumin and oregano; mix well.
  8. Bring to a boil, stirring occasionally.
  9. Reduce heat to low and cover.
  10. Simmer the sauce, stirring occasionally, for 15 minutes; remove cover.
  11. Increase heat to medium-high. Cook, stirring frequently, until the desired consistency, about 5 minutes.
  12. Place cooked pasta on a serving platter. Spoon sauce over pasta. Sprinkle with cheese and top with cilantro.
