Christmas Cashew Drops

Ingredients:

Cookie Dough:
1/2 cup butter
1 cup brown sugar
1 egg
1/2 teaspoon vanilla
2 cup flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup sour cream
1 (6-ounce) can cashews, chopped
FROSTING:
1/2 cup butter
3 cup powdered sugar
2 teaspoon vanilla
Hot water

Directions:

COOKIE DOUGH DIRECTIONS:
1. Cream butter & sugar
2. Add egg & vanilla
3. Mix dry ingredients together & add to rest of ingredients.
4. Add sour cream.
5. Fold in nuts.
6. Drop by teaspoonful onto cookie sheet.
7. Bake at 400 degrees, for 8-10 minutes.
(Cool cookies before frosting)
FROSTING:
Mix butter, powdered sugar & vanilla. Add just enough hot water to make a nice spreading consistency.

I host a Cookie Exchange for family & friends each year. Since 2004, my Christmas Cashew Drops have been the hands down favorite of the exchange. This simple frosted cookie has a unique flavor with the cashews giving them a salty crunch.
Great recipe to make ahead, bake & freeze.
(I recommend when freezing to bake cookies, freeze then ice cookies when defrosted)
