Pine Nut Cookies

Ingredients:

Pine Nut Cookies
½ cup granulated sugar
½ cup powdered sugar
¼ cup unsifted flour
1/8 teaspoon salt
1 – 8 ounce can almond paste
2 egg whites, slightly beaten
½ cup pine nuts, chopped

Directions:

Preheat oven to 300° F. Sift together sugars, flour and salt. Set aside. Mix together almond paste and egg whites, then add to dry ingredients. Mix well. Form into approximately 1 inch balls, roll into chopped nuts, place on parchment covered or greased and floured cookie sheet. Makes about 2 ½ dozen cookies. Bake for 20 – 25 minutes.

Voted # 1 by my family! These are tasty sweet almond and pine nut Italian cookies, bite sized, easy to make and will fly off the plate. I usually make a double batch. About thirty some years ago after tasting these delectable morsels, I asked my husband’s cousin, Connie Mazzacavallo, for the recipe and she very graciously shared it. And I share it with you.
