2015 Recipe Contest Submissions

Buffalo Chip Cookies


1 – 1 lb. oleo soft
1 – 1lb. Light Brown Sugar
2 c. Sugar
4 c. flour
4 eggs
2 tsp. baking powder
2 tsp. baking soda
2 c. chopped pecans
2 c. quick oats
2 c. crushed cornflakes
12 oz. semi-sweet chocolate chips
6 oz. butterscotch chips


Mix in order of list of ingredients. Drop cookie dough on cookie sheet using a 1/4 measuring cup. 6 cookies on a sheet at a time. Bake at 350 for 15 minutes.

The size of the cookies were always inviting to my girls. Then when I found out that my youngest when she was in 3rd grade was taking them to school and selling for a $1.00 a piece, I had to laugh. She is deceased now, but I don’t miss a year of making these cookies. Now I have 3 grandsons who always ask for them. Their mom and aunt have told them the story, but also told them, no selling cookies. I have had some of my daughters friends over the years also ask about those cookies. These cookies will always bring a smile to my face and my family-they have a memory that will always be there.
