Christmas Cut Out Cookies

Ingredients:

Cookies: Royal Icing:
1 – cup butter 1 1/4 cup powdered sugar
1 – cup sugar 1/8 tea cream of tartar
3 – egg yolks (save the whites) 1 egg white
2 1/2 – cup flour 1/4 tea vanilla
1/2 tea salt
1 – tea vanilla

Directions:

Cookies:
Cream together butter and sugar. Add egg yolks one at a time mixing well between each. Add remaining ingredients and mix well. I start out with my mixer, but end up mixing the the flour in by hand. Dough should be easy to handle. If too dry, add a tad of egg white. If too sticky add a tad of flour. Cut ball of dough in four sections and roll out one section at a time. Roll out in plenty of flour. Cut out with cookie cutters and bake in 350 degree oven for 8-10 min. Do Not Over Bake or they will be hard. Cool

Royal Icing:
1 1/4 cup powdered sugar 1 egg white
1/8 tea cream of tartar 1/4 tea vanilla

I always mix this icing by hand so you can feel the consistency. If to thin, add more powdered sugar. If to thick, add a tad of egg white.

This cookie has been our families favorite Christmas cookie for about 45 years. Our grandchildren are ages 22 and 16 and these are the first cookies they still ask for at Christmas. This cookie is a soft cookie (do not over bake) They are very buttery tasting and with the royal icing, they freeze very well. I have made these several weeks ahead of time and put them in the freezer between layers of waxed paper. Just thaw them out closer to the time you want to serve them and they taste like you just baked them.
