Gingerbread Men


1 c shortening, butter or margarine
2 c white sugar
1/2 c molasses or sorghum
2 eggs, beaten
1 tsp baking soda
1 tsp. ginger
1/2 tsp salt
1 tsp cinnamon
1 tsp vanilla
4 1/2 c all-purpose flour


Cream shortening and sugar in large bowl. add beaten eggs and vanilla and mix well. stir together the spices, salt, soda and flour and add gradually. Mix well. cover and refrigerate dough for 1 hour or overnight. Roll out part at a time on floured board and cut with gingerbread man cookie cutter. Place on baking sheet lined with parchment paper and bake 400 degrees for approx. 10 minutes or until lightly browned. Cool on wire rack. frost when cool with prepared icing or basic butter cream icing. Sprinkle and decorate with seasonal sprinkles, chocolate chips, red cinnamon candies, etc.

My mother-in-law gave me this recipe when I was a young bride. I made these for my husband, then for my children and most recently my grandchildren. It was a family tradition for the children and later my grandchildren to gather around the big kitchen table to frost and decorate the gingerbread men before Christmas each year.
