Almond Snowflake Cookies


1 cup butter (softened), 3/4 cup sugar, 1 tsp almond extract, 2 cups all purpose flour, 1/2 tsp baking powder, 1/2tsp salt

Glaze Ingredients: 1 cup confectioner’s sugar, 1-1/2 tsp almond extract, 2 tsp water. Decorate with sliced and slivered almonds, sanding sugar


IN a large mixing bowl, cream butter and sugar. Beat in almond extract. In another bowl, combine flour, baking powder and salt. Gradually combine this with above created mixture. Cool combined mixtures in refrigerator for 1 hour. Roll into 1 inch balls and place 2 inches apart on parchment paper lined cookie sheet. Flatten balls with a flat bottom glass, coated with soft butter and sugar if needed. Bake at 400 degrees for 7-9 minutes or until edges are light brown. Cool for 1 minute before removing to wire rack.

Glaze: In a small bowl, whisk together the confectioner’s sugar, extract and water. Spread each cookie with glaze. Decorate in snowflake designs with sliced and slivered almonds. Also may sprinkle with sanding sugar.
