Cinnamon/Almond Cookies


2 cups granulated sugar, 4 whole eggs, 4 egg yolks.

2-3 TBS cinnamon, 1/4 tsp salt, 1 lemon

3 and 1/2 cups of flour, 1 tsp baking powder, 1/2-1/3 lb. chopped almonds


Stir and beat 1 cup of sugar witht he whole eggs and yolks until foamy, add the cinnamon plus the salt. Grate the rind of a lemon and add to the mixture. Sift the 3 and 1/2 cups of flour with 1 tsp baking powder. in a heavy iron skillet or an electric skillet, melt and brown 1 cup of sugar and add the almonds, stir until all nuts are coated. Here you must work quickly adding the almond mixture to the basic dough and mix.

This dough is very stiff. Set your oven temperature at 350-375 degrees. Drop by teaspoonfuls onto a greased cookie sheet. Bake for 20-25 minutes until lightly brown. The cookies may become very hard, if so add a slice of apple to the cookie container to soften them.
