1 medium potato, baked
Creamy peanut butter
1/2 teaspoon vanilla
1 lb powdered sugar
Take the inside of a partially cooled baked potato and smash with a fork. Add the vanilla and slowly add the powdered sugar until you are able to roll it out with a rolling pin. Spread with peanut butter and carefully roll as you would for a cake roll. Sprinkle more powdered sugar on top and freeze for a half hour. Then slice into candy.
We all enjoyed the memory of watching our grandfather make it for the holidays! It was one of his favorite things to do.
