2015 Recipe Contest Submissions

Pink Divinity


3 C sugar
3/4 C white karo
3/4 C hot water
1 pkg strawberry jello
2 egg whites
1 C chopped nuts
1 C coconut


In 2 or 3 quart saucepan combine sugar, karo, & water—cook & stir only til sugar is dissolved. Boil, “without” stirring, to hard ball stage (260* on candy thermometer). Remove from heat. Beat egg whites immediately to “stiff” peaks. Add Jello, & continue beating til blended. Pour hot syrup slowly over egg white mixture, beating at high speed on electric mixer. Continue beating til “soft” peaks form and mixture loses its gloss. Then add nuts & coconut & fold into mixture. Pour, and spread into well-buttered pan. Cut when cool. (Can be dropped from teaspoon in mounds if desired.)
