Best Ever Carmels


2 cups sugar 1 cup milk
1 cup brown sugar 1 cup butter
1 cup light corn syrup 1 1/4 tsp. vanilla
1 cup heavy cream


Combine sugars, corn syrup, cream, milk and butter.
Cook slowly, stirring occasionally to a firm ball stage (248*).
Remove from heat and add vanilla.
Pour into a greased glass pan. (I divide into 2 8″ glass pans). Cool.
When firm turn out onto a cutting board and cut into squares
and wrap in wax paper.

When I was little I remember my mother making these every Christmas. She passed away when we were still young. When I moved out on my own I found her recipe. I have been making them at Christmas time for my family ever since I’ve been married. My husband and children love them and I always remember to share a few with my siblings. Sweet memories of our beautiful mother Rita.
