Best Ever Caramels


3 c. Whipping Cream
2 c. Sugar
1 c. White Syrup


Cook sugar, white syrup, and 1 cup Whipping cream over low heat til soft ball stage (238-240* F)
Add 1 more cup whipping cream & cook til soft ball stage again.
Add last cup whipping cream & cook to firm ball stage (244-248* F)
Add pinch of salt & 2 1/2 teaspoons vanilla.
Pour onto a buttered pan. (I use a jelly roll pan)
Cool, cut into pieces & wrap in wax papers.
