Golden Fudge

Ingredients:

3 cups sugar
1/4 cup light corn syrup
3 TBL. butter or Oleo
1/2 tsp. salt
1 cup evaporated milk
1/2 cup water
2 tsp. vanilla
Green or red candied cherries or pecan halves (optional)

Directions:

Combine sugar, syrup, butter (or Oleo), salt, evaporated milk, and water in a medium-sized saucepan. Heat, stirring constantly to boiling. Then cook rapidly, stirring several times to soft ball stage (a teaspoon of candy will form a soft ball when dropped in cold water.) Remove from heat and add vanilla but do not stir. Cool until lukewarm. Beat 2-3 minutes with spoon or until it starts to thicken and loses its gloss. Spread in buttered 8 x 8 x 2 inch square pan. Let stand 2 or 3 minutes or until just set. Cut into squares. Decorate each square with slivered candy cherry pieces, nut halves or even sea salt. Let stand until firm. Delicious!

I can’t ever remember a time when my Mom didn’t make this fudge for the Christmas holiday. It’s buttery goodness tastes like a brown sugar lump stolen from the cannisters… a forbidden pleasure that can be enjoyed by all!
