Mac’s Carmels

Ingredients:

4 Cups Sugar
3 Cups Corn Syrup
6 Cups Half & Half
1 Teaspoon Vanilla
Nuts (if desired)
Coarse salt for top (if desired)

Directions:

In large sauce pan, add sugar, syrup and 2 cups Half & Half. Cook and stir until it reaches 238 degrees (soft ball)
Add 2 more cups Half & Half. Cook and stir until it reaches 238 degrees again. Add remaining 2 cups Half & Half and once more stir until it reaches 238 degrees. Remove from heat and stir in vanilla and nuts. Pour into well greased 9 x 13. Sprinkle top with coarse salt. Cut into bite sized pieces as soon as it is cool enough. Wrap each piece with waxed paper or freezer paper. Enjoy!

My husband has fond memories from his childhood of how smooth and creamy cousin Mac’s carmels always tasted. Luckily, he asked for the recipe not long before his passing. Wrapping is a family affair and sneaking a sample is a definite must! They are a fun way to spread a little cheer as we gift them to neighbors, relatives, and friends, One thing is sure, they don’t last long!
