Graham Cracker Toffee

Ingredients:

1-14.4oz box graham crackers
1 cup unsalted butter
1 cup sugar
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 1/2 cups semi-sweet chocolate chips (can use milk chocolate if preferred)
1/2 cup pecans, walnuts or peanuts, chopped coarse

Directions:

Line a baking sheet with parchment paper or a silicone baking mat.

Spread graham crackers in an even layer onto your prepared baking sheet, covering the entire sheet. You want the entire sheet covered. You may need to use smaller crackers along the edge to do this.

In a medium saucepan, combine butter, sugar, vanilla and salt over medium heat. Cook, whisking constantly, until butter has melted and mixture is almond brown in color, about 10-15 minutes.
Working quickly, spread the hot caramel mixture evenly over the graham crackers. Sprinkle with chocolate chips. After 1-2 minutes, spread the chocolate chips in an even layer until smooth. Sprinkle with nuts.
Let cool completely, about 2 hours.
Break into pieces, and try not to eat all of it.

This is a family favorite because it’s simple, and delicious. I love that it comes together so quickly, and it makes a lot. It makes a wonderful gift for friends, family and neighbors, as well as teachers. I always get asked for the recipe and it is so easy to make. I think the hardest part is keeping my husband from eating the entire pan. It’s a wonderful addition to any holiday cookie plate, and certainly a hit to anyone I have gifted it to. Everyone always looks forward to the holidays because they know I am about to make it.
