Chocolate Toffee Cookie Crunch Bars

Ingredients:

Cookie Base: 2 Cups finely crushed vanilla wafers or shortbread cookies
1/4 cup firmly packed brown sugar
1/3 cup butter, melted
Toffee Layer: 1/2 cup butter
1/2 cup firmly packed brown sugar
1 cup semi-sweet or milk chocolate morsels
Topping: 1/2 cup finely chopped nuts, toasted (optional)

Directions:

Preheat oven to 350 degrees. In a bowl, combine cookie crumbs and brown sugar. Stir in butter. Press into a foil or parchment lined 13×9″ baking pan. Bake at 350 for 8 minutes.
In a saucepan, combine butter and brown sugar. Cook over medium heat, stirring constantly until mixture comes to a boil. Boil for 1 minute and then immediately pour over baked cookie base.. Return to oven and bake for 10 minute.
Remove from oven and let stand for 2 minutes. Sprinkle on chocolate chips and wait 2 or 3 minutes until spreadable.. Spread evenly and then add chopped nuts over the top. Chill until set and cut or break into pieces.
Varying the type of chocolate is a nice change and toasting the nuts adds more flavor. Be careful not to burn the nuts, though.

This is very reminiscent of a family favorite- English Toffee. We usually save it for Christmas time, but sometimes for special occasions during the year.
