Coconut Joy Candy

Ingredients:

1/2 cup butter (no substitutes)
2 cups powdered sugar
3 cups (about 8 ounces) flaked coconut
2 squares semi-sweet chocolate

Directions:

Soften butter but do NOT melt. Beat in powered sugar and coconut. With a small amount of powdered sugar on your hands, roll into 1-inch balls. Place on parchment paper. Push a small dent into center of each piece with the handle end of a wooden spoon. Melt chocolate squares, pour into a small ziploc bag. Snip off corner and fill indentations. Refrigerate.
