1 cup sugar
1 cup white corn syrup
2 cups raw peanuts
3/4 tbsp baking soda
Pre-measure baking soda and lay aside. Cook syrup, sugar, and peanuts in a large heavy pan to hard crack stage on candy thermometer or until peanuts turn from white to light brown in color. Remove from heat and add baking soda immediately. Stir quickly and rapidly and pour onto heavily buttered cookie sheets. I use two. Do not smooth or spread. Shake cookie sheets to thin out the mixture. Cool. Break into pieces.
