Microwave Peanut Brittle


1 c raw peanuts
1 c sugar
1/2 c white corn syrup
1/8 tsp salt
1 tsp butter
1 tsp vanilla
1 tsp baking soda


In 1 1/2 qt casserole, stir together peanuts, sugar, corn syrup, salt. Microwave on high for 7-8 minutes, stirring well after 4 minutes. Add butter & vanilla to syrup and blend well. Microwave 1 -2 more minutes. Peanuts will be lightly browned and syrup very hot. Add baking soda and gently stir until foamy. Pour onto lightly buttered cookie sheet. Spread and let cool 1/2 hour. When cool, break into pieces and store in airtight container. This also freezes well.
