  • 4 cups all-purpose flour
  • 1-3/4 cups soured milk
  • 1-1/2 teaspoons baking soda
  • 1-1/2 teaspoons salt
  • 2 tablespoons granulated sugar


  • Preheat oven to 400 F. Sour milk by adding 2 tablespoons white vinegar to milk and let sit for a few minutes. Oil a large cast-iron pot. In large mixing bowl, combine flour, baking soda, salt and sugar. Form a well in center and add soured milk. Stir to create a sticky dough. If too dry, add a bit more milk, a tablespoon at a time. When dough comes together, turn onto floured board and knead lightly three or four times. Don’t overwork dough or it will be tough. Form into a large ball and place in oiled cast iron pot. Slightly flatten the top. Cut a deep cross in top of loaf with a sharp knife. Cover with lid. Bake for 30 minutes, then remove lid and bake for another 15 minutes. Loaf is done when the cross in center looks done and a toothpick comes out clean. Cover with a slightly dampened towel and allow to cool about 10 minutes before serving.
