Homemade Pizza Sauce

Ingredients
- 2 cups onion diced
- 2 cups sweet pepper diced
- 16 cups tomato juice
- 1/2 cup garlic minced
- 3 tablespoons olive oil
- 3 tablespoons oregano
- 3 tablespoons paprika
- 3 tablespoons fennel seeds crushed
- 2 tablespoons basil
- 2 tablespoons thyme
- 2 tablespoons parsley
- 1/2 cup sugar
- 1/8 cup salt
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cayenne pepper
- 4-5 cans tomato paste
Instructions
- Blend onions and sweet peppers until smooth.
- Combine all ingredients in a large pot and bring to a boil on the stovetop.
- Reduce to a simmer and cook down to pizza sauce consistency.
- Place in small containers and freeze or use a pressure canner to preserve.
