Blueberry Buckle Coffee Cake

Ingredients

  • 2 c. blueberries canned
  • 2 c. flour
  • 3/4 c. sugar
  • 2-1/2 tsp. baking powder
  • 3/4 tsp. Salt
  • 1/4. c. shortening
  • 3/4 c. milk
  • 1 egg
  • 1/2 c. sugar
  • 1/3 c. flour
  • 1/2 tsp. Cinnamon
  • 1/4 c. soft butter

Instructions

  • Heat oven to 375 degrees.
  • Grease 9x13" dish.
  • Blend all ingredients EXCEPT blueberries and topping ingredients.
  • Carefully stir two cups of well-drained blueberries into batter. Spread in dish.
  • Mix together topping ingredients and sprinkle over batter.
  • Bake 45-50 minutes. Yield: 12 servings.
