Corn Scallop

Ingredients
- 2 eggs
- 1 15-ounce can whole kernel corn
- 1 15-ounce can creamed corn
- 1 6-ounce can evaporated milk
- 2 tablespoons butter melted
- 2 tablespoons onion minced
- 1/4 teaspoon black pepper
- 2 cups coarsely crushed saltine crackers
- 1 12-ounce package pepper jack or Swiss cheese diced
Instructions
- Preheat oven to 325 F.
- Grease a 9-by-13-inch baking dish.
- Beat eggs slightly in a large bowl.
- Stir in whole kernel corn and creamed corn.
- Add evaporated milk, butter, onion and pepper.
- Fold in cracker crumbs and diced cheese.
- Spoon corn mixture into the prepared dish and bake 1 hour or until set.
