Easy Lemon Pie

  • 1 9" pie crust
  • 1 medium lemon
  • 1/2 cup butter, melted
  • 1 cup granulated sugar
  • 4 large eggs
  • sweetened whipped cream


  • Preheat oven to 350 F. This can be made in a food processor or blender. Put crust in pie pan and set on cookie sheet. To make filling, cut ends off lemon and slice into 8 pieces. Remove seeds and place into food processor or blender. Process until it becomes mush. Add melted butter, sugar and eggs and blend thoroughly. Pour into crust. Bake 40 minutes or until mixture solidifies and browns. Cool. Serve topped with whipped cream. Store leftovers in refrigerator.
