Whole Wheat Baking Mix (recipe for one quart Mix)

Ingredients:
1/2 Cup All Purpose Flour
2 Cups Whole Wheat Flour
3 Tablespoons Baking Powder
1 Tablespoon Sugar
1/2 Teaspoon Salt
1/2 Cup (1 Stick) Cold Butter
Directions:
Mix together flours, baking powder, sugar and salt in a medium bowl. Cut in the cold butter using a pastry blender. Mix the butter and flour mixture until the butter is in small balls and is coated in the flour. Place in a quart jar. Cover the lid with a pretty fabric and ribbon. Also add the recipes below, and directions to re-fill the jar with mix!
Store in the refrigerator or freezer. Mix will last in the refrigerator until the expiration date on the butter.
Recipes can easily be doubled.
Biscuits:
Mix together with fork: 1/3 Cup Milk (any kind) and 1 Cup pre-made mix. Roll out and shape into large rectangle about 1 inch thick, cut into squares or cut out with glass or biscuit cutter. Place onto baking sheet and bake at 450 degrees 10-12 minutes.
1 Cup Mix will make about 6 large biscuits.
Pancakes:
In a medium bowl, mix 1 Cup mix and 1/2 Cup Milk (any kind), and 1 egg. Pour batter onto hot griddle, cook until top side starts to bubble, then flip. Cook on other side until browned. Serve immediately with syrup, fruit, or jam.
1 Cup Mix will make enough pancakes for about two people.
