Funnel Cakes

  • 3 eggs beaten
  • 2 cups milk
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup cornmeal
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • oil for frying
  • Confectioners sugar


  • In a large bowl, beat the eggs, milk and dry ingredients. Mix until smooth. Heat oil on the stove until hot. Pour about 1/4 cup of batter through a funnel and fry until golden brown, turning once. Remove with a slotted spoon and drain on paper towels. Sprinkle with powdered sugar or cinnamon sugar and serve on generic white paper plates - just like at the fair.
