Summer Squash Skillet

  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 2 cups squash cubed, any variety
  • 3 medium tomatoes peeled and diced
  • 4 tablespoons butter
  • 1 tablespoon sugar
  • 1 tablespoon flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper


  • Saute the chopped onion and green pepper in butter until tender. Stir in the sugar, flour, salt and pepper. Add the cubed squash and diced tomatoes. Cook over low heat until tender.
