Ham and Potato Casserole

  • 3/8 cup onion chopped
  • 1/8 cup Green pepper chopped
  • 1 tablespoon butter or margarine
  • 1/2 tablespoon all-purpose flour
  • 1 dash Black pepper
  • 1/2 cup milk
  • 1/2 cup Cheddar cheese shredded
  • 1/8 cup real mayonnaise
  • 1-1/2 cup potatoes cooked and diced (I like to use frozen shredded hashbrowns)
  • 1 cup Cooked ham diced


  • Heat oven to 350 degrees. Cook onion and green pepper in margarine until tender. Stir in flour and pepper. Add milk and bring to a boil, stirring constantly. Reduce heat and add cheese and mayonnaise; stir until cheese melts. Add potatoes and ham; put into greased casserole dish. Bake for 30 minutes.
