Mini Angel Food Cakes

Ingredients
- 9 egg whites
- 1/2 cup flour
- 1 teaspoon cream of tartar
- 1/4 cup powdered sugar
- 3/4 cup granulated sugar
- 1/2 teaspoon vanilla
Instructions
- Preheat oven to 350 F.
- Place egg whites in mixing bowl and let sit for 10 minutes.
- Sift flour, powdered sugar and cream of tartar in separate bowl. Set aside.
- Beat egg whites until stiff peaks form and then continue to beat while adding the granulated sugar until well mixed.
- Add vanilla while mixing and then the flour mixture until well combined.
- Pour into greased and floured mini cake or loaf pans. This recipe should make around 6 cakes.
- Bake for 30-35 minutes until golden light brown. Take out and turn upside down on wire rack to cool.
- Garnish with favorite berries, whipped topping and powdered sugar.
