Mini Angel Food Cakes

Ingredients

  • 9 egg whites
  • 1/2 cup flour
  • 1 teaspoon cream of tartar
  • 1/4 cup powdered sugar
  • 3/4 cup granulated sugar
  • 1/2 teaspoon vanilla

Instructions

  • Preheat oven to 350 F.
  • Place egg whites in mixing bowl and let sit for 10 minutes.
  • Sift flour, powdered sugar and cream of tartar in separate bowl. Set aside.
  • Beat egg whites until stiff peaks form and then continue to beat while adding the granulated sugar until well mixed.
  • Add vanilla while mixing and then the flour mixture until well combined.
  • Pour into greased and floured mini cake or loaf pans. This recipe should make around 6 cakes.
  • Bake for 30-35 minutes until golden light brown. Take out and turn upside down on wire rack to cool.
  • Garnish with favorite berries, whipped topping and powdered sugar.
