Mixed Vegetable Casserole

  • 1 20-ounce bag frozen mixed vegetables
  • 1 cup celery chopped
  • 1/2 cup onion chopped
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1-1/2 cups sharp or mild cheddar cheese shredded
  • 2 cups mayonnaise
  • 1 cup crushed Ritz crackers or fried onions


  • Preheat oven to 350 F.
  • In a pan over medium heat, cook the first five ingredients until the vegetables are crisp-tender, about 8 minutes.
  • Drain and stir in the shredded cheese. The cheese will begin to melt in the hot veggies. Then fold the mayonnaise into the vegetable mixture.
  • Pour mixture into a buttered 9X13-inch casserole dish. Top the casserole with cracker crumbs or fried onions.
  • Bake for 30-35 minutes, or until bubbly.
