Mixed Vegetable Casserole

Ingredients
- 1 20-ounce bag frozen mixed vegetables
- 1 cup celery chopped
- 1/2 cup onion chopped
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1-1/2 cups sharp or mild cheddar cheese shredded
- 2 cups mayonnaise
- 1 cup crushed Ritz crackers or fried onions
Instructions
- Preheat oven to 350 F.
- In a pan over medium heat, cook the first five ingredients until the vegetables are crisp-tender, about 8 minutes.
- Drain and stir in the shredded cheese. The cheese will begin to melt in the hot veggies. Then fold the mayonnaise into the vegetable mixture.
- Pour mixture into a buttered 9X13-inch casserole dish. Top the casserole with cracker crumbs or fried onions.
- Bake for 30-35 minutes, or until bubbly.
