Overnight Pancakes


  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 egg
  • 2 cups buttermilk


  • Mix all ingredients together and let stand covered at room temperature overnight. Next morning, add 1 teaspoon baking soda dissolved in 2 teaspoons hot water. Beat well and bake on hot griddle. Can add chopped apples, blueberries or any fruit.
