Pumpkin Pound Cake

Ingredients

  • 2-1/2 cups sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 3 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 1 15-ounce can pumpkin
  • Confectioners’ sugar

Instructions

  • In a large mixing bowl, blend sugar and oil, and add eggs one at a time, beating well after each addition.
  • In a separate bowl, combine flour, baking soda and spices together. Mix flour mixture into egg mixture alternating with the pumpkin.
  • Transfer to a greased 12-cup tube pan. Bake at 350 F for 60-65 minutes or until a toothpick inserted near the center comes out clean.
  • Cool 10 minutes before inverting onto a wire cooling rack. Remove pan and cool completely. Dust with confectioners’ sugar.
