Pumpkin Pound Cake

Ingredients
- 2-1/2 cups sugar
- 1 cup vegetable oil
- 3 eggs
- 3 cups flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon ground cloves
- 1 15-ounce can pumpkin
- Confectioners’ sugar
Instructions
- In a large mixing bowl, blend sugar and oil, and add eggs one at a time, beating well after each addition.
- In a separate bowl, combine flour, baking soda and spices together. Mix flour mixture into egg mixture alternating with the pumpkin.
- Transfer to a greased 12-cup tube pan. Bake at 350 F for 60-65 minutes or until a toothpick inserted near the center comes out clean.
- Cool 10 minutes before inverting onto a wire cooling rack. Remove pan and cool completely. Dust with confectioners’ sugar.
