Super Stuffed Potatoes

Ingredients
- 4 medium baking potatoes
- 1 lb. Ground beef
- 1/4 lb. Velveeta cut into 1/2" cubes
- 1 large tomato chopped
- 2 green onions sliced (I use 4-6)
- 1/2 cup sour cream
Instructions
- Prick potatoes with fork several times. Microwave on high 14 minutes or until tender, turning after 7 minutes. Brown meat in large skillet; drain. Add Velveeta, tomato and onions. Cook until Velveeta is melted and mixture is well blended. Split potatoes, mash insides with fork. Top with meat mixture and then sour cream.
