Verde Chicken

Ingredients
- 2 chicken breasts sliced
- 1 medium onion sliced in wedges
- 1 yellow bell pepper sliced
- 2 cloves garlic minced
- 3/4 cup salsa verde
- 2 tablespoons olive oil
- Soft flour tortillas
- Avocado if desired
Instructions
- Slice chicken, season with garlic and pepper, and add to heated oil in a large skillet over medium heat. Stir occasionally until no longer pink and some pieces are browning.
- Push chicken to edges of skillet and add onion and continue to stir until slightly translucent, 1 to 2 minutes.
- Add bell peppers to center of skillet and stir until crisp-tender, another 1 to 2 minutes.
- Turn off heat under skillet and add the salsa verde.
- Warm the tortillas and fill them with the chicken mixture and avocado slices.
