Verde Chicken

Ingredients

  • 2 chicken breasts sliced
  • 1 medium onion sliced in wedges
  • 1 yellow bell pepper sliced
  • 2 cloves garlic minced
  • 3/4 cup salsa verde
  • 2 tablespoons olive oil
  • Soft flour tortillas
  • Avocado if desired

Instructions

  • Slice chicken, season with garlic and pepper, and add to heated oil in a large skillet over medium heat. Stir occasionally until no longer pink and some pieces are browning.
  • Push chicken to edges of skillet and add onion and continue to stir until slightly translucent, 1 to 2 minutes.
  • Add bell peppers to center of skillet and stir until crisp-tender, another 1 to 2 minutes.
  • Turn off heat under skillet and add the salsa verde.
  • Warm the tortillas and fill them with the chicken mixture and avocado slices.
