Sweet Heat Salsa

Ingredients

  • 1 16-ounce can diced tomatoes do not drain
  • 1/4 red onion
  • 2 cloves garlic
  • 1 pinch salt
  • 3 tablespoons dried parsley
  • Pickled jalapenos to taste
  • 2 tablespoons frozen pineapple juice concentrate

Instructions

  • Place tomatoes, onion, garlic, salt and parsley in blender or food processor and blend until smooth.
  • Add jalapenos and blend. Taste to make sure it has enough heat.
  • Add the juice concentrate and blend. Taste to make sure it’s sweet enough.
  • Pour into bowl and serve with tortilla chips.
