Apricot-Glazed Pork Tenderloin Medallions
  1. Season both sides of pork with salt and pepper.
  2. Heat oil in large skillet over medium-high heat.
  3. Add pork and sear 2 minutes per side.
  4. Add apricot preserves, tamari or soy sauce and ginger and bring to a simmer.
  5. Simmer 5-15 minutes until pork is cooked through and sauce reduces. You can also use light or sugar free preserves.
