Caprese Chicken with Bacon
  1. Place bacon in an ungreased 15x10x1” baking pan.
  2. Bake at 400 degrees for 8-10 minutes or until partially cooked but not crisp. Remove to paper towels to drain.
  3. Place chicken in an ungreased 9x13” pan; brush with oil and sprinkle with salt and pepper. Top with tomatoes and basil.
  4. Wrap each in two bacon strips, arranging bacon in a crisscross.
  5. Bake, uncovered, at 400 degrees for 20-25 minutes or until a meat thermometer reads 170 degrees.
  6. Top with cheese; bake 1 minute longer or until melted.
  7. Makes 4 servings.
