Lemon Bread

Ingredients
- 1-1/2 cups all-purpose flour
- 1-1/2 cups whole wheat flour
- 1-1/4 cups granulated sugar
- 1 tsp salt
- 1 tsp baking soda
- 3/4 tsp baking powder
- 2 cups shredded unpeeled yellow summer squash
- 2 tsps lemon extract
- 2 tbsps fresh lemon juice
- 1 lemon, zested
- 3 eggs
- 1 cup canola oil
Instructions
- Preheat oven to 350 F. Combine first 10 ingredients in large bowl. In small bowl, combine eggs and oil. Pour over flour mixture and stir until moistened. Grease 2 large or 3 small loaf pans and divide batter among pans. Bake 40 minutes or longer until cake tester comes out clean. Cool 10 minutes, remove from pans and let cool.
