Marinated Mushrooms

Ingredients

  • 1/3 cup red wine vinegar
  • 1/2 cup corn oil
  • 1 onion thinly sliced into rings
  • 1 teaspoon prepared mustard
  • 1 teaspoon salt
  • 2 teaspoon parsley flakes
  • 1 tablespoon light brown sugar
  • 1-1/2 to 2 pounds fresh cleaned mushrooms

Instructions

  • Combine all ingredients except mushrooms in saucepan and bring to a boil. Add mushrooms and simmer 5-6 minutes. Pour into a glass bowl. Chill, covered, for at least 2 hours, stirring occasionally. Drain and serve.
