Marinated Mushrooms

Ingredients
- 1/3 cup red wine vinegar
- 1/2 cup corn oil
- 1 onion thinly sliced into rings
- 1 teaspoon prepared mustard
- 1 teaspoon salt
- 2 teaspoon parsley flakes
- 1 tablespoon light brown sugar
- 1-1/2 to 2 pounds fresh cleaned mushrooms
Instructions
- Combine all ingredients except mushrooms in saucepan and bring to a boil. Add mushrooms and simmer 5-6 minutes. Pour into a glass bowl. Chill, covered, for at least 2 hours, stirring occasionally. Drain and serve.
