Mini Turkey Meat Loaf

Ingredients
- 1/2 slice bread crumbled
- 2 tablespoons carrot finely shredded
- 1 tablespoon onion chopped
- 1 tablespoon celery chopped
- 1 tablespoon green bell pepper chopped
- 1/4 teaspoon salt
- 1 dash pepper
- 2 tablespoons chili sauce or ketchup divided
- 1/4 pound ground turkey
Instructions
- Preheat oven to 350 F.
- In a bowl, combine bread, carrot, onion, celery, green pepper, salt, pepper and 1 tablespoon chili sauce or ketchup. Add ground turkey and mix well.
- Shape into a small loaf and place in an ungreased shallow baking dish. Top with remaining chili sauce or ketchup.
- Bake uncovered for 35-40 minutes, or until internal temperature reaches 165 F.
Notes
Ground beef can also be used.
