Mushroom Appetizers

  • 2 small onions and/or 1 small shallot finely chopped
  • 1/2 cup butter
  • 2 pounds button mushrooms stems removed and reserved
  • 3/4 pound prosciutto chopped
  • 5 sprigs parsley chopped
  • 1 pkg pepper boursin cheese
  • 1/4 teaspoon thyme


  • Preheat oven to 400 F. Wash and finely chop mushrooms stems and set aside. Saute onion in butter until translucent. Add mushrooms stems and saute until golden brown. Remove from heat and add prosciutto, parsley, boursin cheese and thyme. Mix well. Grease cookie sheet. Stuff mushroom caps with mixture and bake about 15-20 minutes.
