Instructions
  1. Preheat oven to 450 degrees.
  2. Arrange potatoes and onions in large shallow roasting pan lined with foil.
  3. Combine oil, butter, garlic, salt and pepper in a small bowl.
  4. Drizzle over potatoes and onions and toss well to combine.
  5. Bake 30 minutes.
  6. Stir and bake 10 minutes more.
  7. Add herbs; toss well.
  8. Continue baking 10 to 15 minutes or until vegetables are tender and browned.
