Pecan Stuffed Chicken Breasts

Ingredients
- 1-1/2 cups bread cubes
- 1/4 cup onion chopped
- 1/2 cup celery chopped
- 1 medium apple chopped
- 3/4 cup pecans chopped
- 2 tablespoons butter melted
- 2 teaspoons parsley flakes
- Salt and pepper
- 8 boneless chicken breasts butterflied
- Lemon juice
- 2 tablespoons butter melted
Instructions
- Preheat oven to 350 F.
- Combine first 8 ingredients and divide among the 8 chicken breasts.
- Roll inside breast and place seam side down in greased 9x13-inch baking dish. Brush with lemon juice and melted butter.
- Season with salt and pepper and bake until internal chicken temperature reaches 165 F, about 50-55 minutes.
