Pecan Stuffed Chicken Breasts

Ingredients

  • 1-1/2 cups bread cubes
  • 1/4 cup onion chopped
  • 1/2 cup celery chopped
  • 1 medium apple chopped
  • 3/4 cup pecans chopped
  • 2 tablespoons butter melted
  • 2 teaspoons parsley flakes
  • Salt and pepper
  • 8 boneless chicken breasts butterflied
  • Lemon juice
  • 2 tablespoons butter melted

Instructions

  • Preheat oven to 350 F.
  • Combine first 8 ingredients and divide among the 8 chicken breasts.
  • Roll inside breast and place seam side down in greased 9x13-inch baking dish. Brush with lemon juice and melted butter.
  • Season with salt and pepper and bake until internal chicken temperature reaches 165 F, about 50-55 minutes.
