Quick Fruit and Lemon Drops

Ingredients

  • 1/2 cup sugar
  • 1 box lemon cake mix
  • 1/3 cup water
  • 1/4 cup butter softened
  • 1 egg
  • 1 tablespoon lemon peel grated
  • 1 cup mixed dried fruit bits

Instructions

  • Preheat oven to 350 F.
  • Grease cookie sheets or use parchment paper.
  • Place sugar in a shallow bowl.
  • In a large bowl, beat cake mix, water, butter, egg and lemon with a mixer on low speed until well blended. Fold in fruit bits until evenly distributed.
  • Shape dough by heaping tablespoonfuls into balls and roll in sugar to coat.
  • Place 2 inches apart on prepared cookie sheets. Bake 12-14 minutes or until set.
  • Cool cookies on sheet pan for 2 minutes and remove to cool completely on a wire rack.
