Rhubarb Salad

  • 2 cups chopped rhubarb
  • 1 cup water
  • 1 cup granulated sugar or sweetener
  • 8 ounce can crushed pineapple with juice
  • 3 ounce package dry strawberry gelatin use unsweetened
  • 1/2 cup chopped nuts optional


  • In saucepan, combine rhubarb, water and sugar and cook until tender. Cool. Then add remaining ingredients and mix together. Refrigerate.
