Roasted Sausage and Vegetables
- 1 large sweet potato
- 1 sweet onion
- 1 head broccoli
- 13 ounces smoked turkey sausage
- 2 tablespoons extra-virgin olive oil divided
- Salt and pepper to taste
- Preheat oven to 425 F. Cut sweet potato into large cubes. Place into bowl and toss with 1 tablespoon olive oil, salt and pepper. Place on a sheet pan and roast 15 minutes. Meanwhile, slice the onion and cut the broccoli into florets. Toss together with 1 tablespoon olive oil, salt and pepper. When the timer for the potatoes goes off, stir the potatoes and add the broccoli and onions. Roast 15 minutes. Stir the mixture and add sliced turkey sausage and roast 10 more minutes. Divide into four containers and refrigerate. When ready to eat, heat up in the microwave.
