White Chocolate Berry Muffins
  1. In a large mixing bowl, beat cream cheese and sugar until smooth. Add eggs and vanilla; mix well.
  2. Combine flour, baking powder and salt. Add to cream cheese mixture just until blended. Stir in raspberries and white chocolate chips.
  3. Fill greased or paper-lined muffin tins 2/3 full. Bake at 375° for 20 to 25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to wire rack.
