Zucchini Bread

Servings 2 loaves

Ingredients

  • 3 eggs
  • 1 C. oil or applesauce
  • 2 C. dark brown sugar packed
  • 2 C. zucchini grated
  • 3 C. flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. vanilla or cookies and cream ice cream
  • 1 C. nuts chopped

Instructions

  • Beat eggs; add oil, sugar and zucchini and mix well. Stir in flour, salt, and baking soda. Add vanilla and nuts. Pour into two greased loaf pans. Bake for 1 hour at 350-degrees.
